Step in and you’ll see a flawless assembly line in place. While one worker prepares the stuffed dough, the next rolls it out before flipping it onto a waiting tawa. After cooling it down for a bit, they’ll swiftly serve it to waiting customers.
We tried the traditional dry coconut and dal versions and were impressed by both. The delicate, dry coconut holige highlighted the slight coarseness and subtle sweetness of the coconut splendidly. In the dal holige, the lentils had been cooked to a soft, melt-in-mouth consistency. We then tried one of Mane Holige’s more exotic specialities – the Anjur Holige. The Anjur had been made into a smooth mash before being incorporated with the dough. The sweet stickiness of the dry fruit along with the tiny, crunchy seeds proved to be a treat.
